Manual harvest of grapes followed by maceration in a stainless steel winemaker at low temperature. After racking and the static clarification phases, we proceed, with the aid of selected yeasts, to alcoholic fermentation at a controlled temperature and rest on the mother yeasts. The clarification, microbiological stabilization and filtration phases follow in the spring following the harvest.
